Dirty Mezcal Tonic

Bitters are the trend in mixology right now. That’s why a tonic is a great mezcal format. The agave’s distinctly smokey flavor is deeply enhanced by the taste and smell of rosemary and olives. This cocktail was created specifically for New York City and it’s now a Creyente signature.

Ingredients
  • Sprig of rosemary
  • 1.5 oz Mezcal Creyente
  • 0.5 oz olive brine
  • 3 olives
  • 1 lime wedge
  • Tonic water
Directions
  1. In a mixing glass, add the mezcal, olive brine, tonic and ice and stir.
  2. Take a big sprig of rosemary and rub the inside of a highball glass to infuse the glass with the oils.
  3. Add ice to the highball and stir the ice to chill the glass.
  4. Double-strain the mezcal and olive brine mixture through a mesh strainer into the highball with ice.
  5. Top with tonic. Garnish with lime wedge and olives.
